Cherry Coconut Bars

11 ingredients
- 1 and 1/4 cup Flour
- 1/2 cup Butter
- 1/4 cup Powdered sugar
- 1/2 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 3/4 cups Nuts
- 1/2 cup Coconut (slivered)
- 3/4 cups Cherries (pitted and stemmed)
- 2 Eggs
- 2 drops Almond extract

Preheat oven to 325 F.

Mix butter and powdered sugar for dough in mixer. (Don't beat too long - better not to melt the butter either)

Add 1 cup flour and a pinch of salt, beat just briefly.

Dump into 8"x8" ungreased pan and press into bottom.

Bake for about 15 minutes, don't let edges get brown.

While baking, mix eggs, remaining flour, baking powder, salt, almond extract, vanilla, nuts, coconut, cherries and sugar together.

Spread mixture over hot pastry, then bake for about 20-25 minutes until completely set.

When cool, sprinkle with powdered sugar and cut into squares.
