Almond Biscotti

Cookies - makes 12 servings

10 ingredients

  • 4 tablespoons Butter
  • 1 and 1/2 cup Sugar
  • 3 and 3/4 cups Flour
  • 2 Eggs
  • 1/8 teaspoon Salt
  • 1 and 1/2 teaspoon Baking powder
  • 2 teaspoons Vanilla extract
  • 2 Egg whites
  • 1/3 cup Almond liqueur
  • 3/4 cups Almonds

8 steps

  1. Combine flour, sugar, baking powder, and salt.
  2. Stir in nuts, eggs, butter, vanilla and liqueur. (Optional: add 1/2 cup chopped dried cranberries) Mix 'til blended. Knead lightly.
  3. Divide in half. Form batter into 4 rolls of 8" x 2"1/2. Place on cookie sheet.
  4. Bake 35 minutes at 325 F.
  5. Remove from oven and turn oven down to 300.
  6. Cool 10 minutes, then cut into 1/4" slices.
  7. Arrange on a cookie sheet cut side down. (I often stand the slices up to get more on a sheet)
  8. Bake 10-15 minutes.
