Almond Biscotti

Cookies - makes 12 servings

10 ingredients
- 1/3 cup Almond liqueur
- 3/4 cups Almonds
- 3 and 3/4 cups Flour
- 1 and 1/2 cup Sugar
- 1 and 1/2 teaspoon Baking powder
- 1/8 teaspoon Salt
- 4 tablespoons Butter
- 2 teaspoons Vanilla extract
- 2 Eggs
- 2 Egg whites

Combine flour, sugar, baking powder, and salt.

Stir in nuts, eggs, butter, vanilla and liqueur. (Optional: add 1/2 cup chopped dried cranberries) Mix 'til blended. Knead lightly.

Divide in half. Form batter into 4 rolls of 8" x 2"1/2. Place on cookie sheet.

Bake 35 minutes at 325 F.

Remove from oven and turn oven down to 300.

Cool 10 minutes, then cut into 1/4" slices.

Arrange on a cookie sheet cut side down. (I often stand the slices up to get more on a sheet)

Bake 10-15 minutes.
