Merengue Kisses

From the kitchen of Kathy (Jan's friend)

Cookies - makes 12 servings

Cook time: 20 mins
Rest time: 7 mins

5 ingredients

  • 1 and 1/4 cup Sugar
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Vanilla extract
  • 4 medium Egg whites
  • 2 and 1/2 cups Coconut (shredded)

10 steps

  1. (note: can sub coconut for 2 cups chopped nuts)
  2. Preheat oven to 325 F.
  3. Beat egg whites until frothy.
  4. Gradually add sugar and beat until stiff and glossy.
  5. Stir in remaining ingredients.
  6. Use spoonfuls to drop onto brown paper on cookie sheet (or use teflon baking sheets).
  7. Bake for 20 minutes at 325 F.
  8. Remove paper from cookie sheet, place wet towel on sheet, and set paper of cookies back on.
  9. Let steam work for 7 minutes.
  10. Remove and store cookies.
