Key Lime Pie

- 1 and 1/2 cup Sugar
- 3 Eggs
- 1/4 teaspoon Salt
- 1 and 1/2 cup Water
- 1/3 cup Cornstarch
- 1/4 cup Lime juice
- 1 tablespoon Lime zest
- a few drops Food coloring (green)
Preheat oven to 350 F.
Separate egg whites and egg yolks. Beat egg yolks.
Combine cornstarch, sugar and salt in pan. Add water and boil for 1 minute.
Remove from heat, pour 1/2 mixture into egg yolks, mix and return to pan.
Return to heat and boil one more minute.
Remove from heat and stir in lime juice, zest, and food coloring.
Pour into baked pie shell. Cover with meringue (made by beating 3 egg whites and a dash of sugar to stiff peaks).
Bake for 12 to 15 minutes at 350 F.
Cool for one hour before serving.
