Rhubarb Pie

7 ingredients

  • 1 and 3/4 cup Sugar
  • 1/3 cup Flour
  • 3 Eggs
  • 1/8 teaspoon Salt
  • 1/2 cup Milk
  • 6 to 8 Rhubarb stalks
  • 1/4 teaspoon Cream of tartar

7 steps

  1. Preheat oven to 375 F.
  2. Cut rhubarb stalks into 1" pieces and place into unbaked 9" pie crust.
  3. Mix 1 and 1/2 cup sugar with flour, salt, and milk. Pour custard over rhubarb.
  4. Bake at 375 F for 45 minutes.
  5. When pie is baked, make a meringue by beating egg whites until frothy, then adding cream of tartar and sugar slowly, continuing to beat until it forms stiff peaks.
  6. Put meringue on pie, then bake 10 minutes at 375 F until golden brown.
  7. Cool away from drafts. No matter what you do, this will fall some as it cools.
