Mom's Carrot Cake

- 2 cups Flour
- 2 teaspoons Baking powder
- 1 and 1/2 teaspoon Baking soda
- 2 teaspoons Cinnamon (ground)
- 2 cups Sugar
- 1 and 1/2 cup Oil
- 4 Eggs
- 2 cups Carrot (grated)
- 1 cup Pineapple (crushed)
- 1/2 cup Butter
- 8 ounces Cream cheese
- 1 teaspoon Vanilla extract
- 1 pound Powdered sugar
- 1 and 1/2 teaspoon Salt

Preheat oven to 350 F.

Mix flour (sifted), baking powder, baking soda, cinnamon, salt, and sugar.

Add oil and eggs, mix well.

Add carrots and pineapple.

Bake in 3 9-inch pans (greased and floured) at 350 F for 35 to 40 minutes (use toothpick test).

For the cream cheese icing, cream butter, cheese and vanilla. Add powdered sugar and beat until creamy.
