Mom's Carrot Cake

  • 2 cups Flour
  • 2 teaspoons Baking powder
  • 1 and 1/2 teaspoon Baking soda
  • 2 teaspoons Cinnamon (ground)
  • 2 cups Sugar
  • 1 and 1/2 cup Oil
  • 4 Eggs
  • 2 cups Carrot (grated)
  • 1 cup Pineapple (crushed)
  • 1/2 cup Butter
  • 8 ounces Cream cheese
  • 1 teaspoon Vanilla extract
  • 1 pound Powdered sugar
  • 1 and 1/2 teaspoon Salt

6 steps

  1. Preheat oven to 350 F.
  2. Mix flour (sifted), baking powder, baking soda, cinnamon, salt, and sugar.
  3. Add oil and eggs, mix well.
  4. Add carrots and pineapple.
  5. Bake in 3 9-inch pans (greased and floured) at 350 F for 35 to 40 minutes (use toothpick test).
  6. For the cream cheese icing, cream butter, cheese and vanilla. Add powdered sugar and beat until creamy.
