Angel Food Cake

- 1 and 3/4 cup Sugar
- 1 and 3/4 cup Flour
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 10 Egg whites
- 1 and 1/2 teaspoon Cream of tartar

Preheat oven to 375 F.

Sift flour and 3/4 cup sugar together in a bowl.

In another large mixing bowl, beat egg whites, salt, cream of tartar and vanilla until foamy.

Beat in remaining 1 cup of sugar, two tablespoons at a time. Beat until stiff, glossy peaks form.

Fold in flour/sugar mixture gently.

Put batter into a 10" tube pan, running spatula through once, to eliminate any big bubbles.

Bake for about 35 minutes, until top springs back when touched.

Invert pan on a bottle to cool.
