12 Layer Coffee Butter Cake

  • 3 cups Butter
  • 2 cups Sugar
  • 1 and 1/2 cup Flour
  • 10 large Eggs
  • 1/4 teaspoon Salt
  • 2 tablespoons Vanilla extract
  • 3/4 cups Milk
  • 4 teaspoons Coffee (instant powder)

  1. Wafers:
  2. Preheat oven to 350 F.
  3. Beat 1 cup softened butter together with 1 cup sugar until light and fluffy.
  4. Beat in 4 eggs, 1 at a time.
  5. Add 1 teaspoon vanilla.
  6. Stir in flour and salt just until blended.
  7. Grease and flour the outside bottom of as many 9" round cake pans as you can find. Spread 1/3 cup batter on each, to 1/4" from the edge.
  8. Bake for 10 minutes until golden at edges. Remove to cool on flat wire rack.
  9. Repeat for 12 wafers.
  10. Butter Cream:
  11. Heat milk just to boiling.
  12. In bowl, whisk 6 egg yolks, 1 cup sugar. Gradually add milk.
  13. Return to pan and cook for about 6 minutes until thickened (don't boil).
  14. Stir in coffee powder and 1 tablespoon vanilla. cool to room temperature.
  15. Beat in 2 cups of softened butter, 1 tablespoon at a time. Beat well.
  16. Spread each wafer with 1/3 cup butter cream, except top.
  17. Put remaining buttercream in cake decorator and dress up top.
