12 Layer Coffee Butter Cake

- 3 cups Butter
- 2 cups Sugar
- 1 and 1/2 cup Flour
- 10 large Eggs
- 1/4 teaspoon Salt
- 2 tablespoons Vanilla extract
- 3/4 cups Milk
- 4 teaspoons Coffee (instant powder)

Wafers:

Preheat oven to 350 F.

Beat 1 cup softened butter together with 1 cup sugar until light and fluffy.

Beat in 4 eggs, 1 at a time.

Add 1 teaspoon vanilla.

Stir in flour and salt just until blended.

Grease and flour the outside bottom of as many 9" round cake pans as you can find. Spread 1/3 cup batter on each, to 1/4" from the edge.

Bake for 10 minutes until golden at edges. Remove to cool on flat wire rack.

Repeat for 12 wafers.

Butter Cream:

Heat milk just to boiling.

In bowl, whisk 6 egg yolks, 1 cup sugar. Gradually add milk.

Return to pan and cook for about 6 minutes until thickened (don't boil).

Stir in coffee powder and 1 tablespoon vanilla. cool to room temperature.

Beat in 2 cups of softened butter, 1 tablespoon at a time. Beat well.

Spread each wafer with 1/3 cup butter cream, except top.

Put remaining buttercream in cake decorator and dress up top.
