Bran Muffins

  • 1 teaspoon Vanilla extract
  • 2 cups Raisin bran
  • 1/2 teaspoon Salt
  • 2 and 1/2 teaspoons Baking soda
  • 1 teaspoon Baking powder
  • 2 and 1/2 cups Flour
  • 2 cups Buttermilk
  • 2 Eggs
  • 1/2 cup Sugar
  • 1 cup Brown sugar
  • 1/2 cup Shortening
  • 1 cup Bran flakes
  • 1 cup Water

6 steps

  1. Boil water
  2. Pour boiling water over flakes; let stand
  3. Mix shortening and sugars
  4. Add eggs, milk and vanilla.
  5. Sift dry ingredients, then add to others and mix.
  6. Store everything in closed container in the fridge. Bake in greased tins at 400F for 20 minutes.
