- many gallons Maple sap
Boil to 240 F, then cool slowly to 155 F.
Don't stir syrup during cooling.
Once cooled, stir until crystals form abundantly throughout and gloss fades, then quickly spoon into lightly buttered molds.
If it sets up too quickly, warm it back up and add a small amount of syrup.
