Blueberry Pinwheel Cobbler

9 ingredients
- 2 cups Sugar
- 2 cups Water
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Lemon juice
- 1/2 cup Butter
- 1/3 cup Shortening
- 1 and 1/2 cup Flour (self rising)
- 1/3 cup Milk
- 2 heaping cups Blueberries

(note: instead of self-rising flour, you can use 1 and 1/2 cup of regular flour and 1/2 teaspoon salt and 1 teaspoon of baking powder)

Preheat oven to 350 F.

Make syrup of sugar, water, vanilla, and lemon juice.

Melt butter in 9x12 casserole dish.

Cut shortening into flour, add milk.

Roll dough out to 9x12 rectangle.

Top with fruit and roll up as well as possible.

Cut into about 9 slices and put in casserole dish on top of melted butter.

Pour sugar syrup over slices, sprinkle with cinnamon and bake at 350 F for about 50 minutes.

Don't forget the whipped cream or ice cream!
