Corn Bread

- 1/4 cup Shortening
- 2 tablespoons Sugar
- 1 cup Flour
- 1 Egg
- 1/2 teaspoon Salt
- 4 teaspoons Baking powder
- 1 cup Milk
- 1 cup Yellow cornmeal

Preheat oven to 425 F.

Grease a square pan (8x8x2 or 9x9x2 inches).

Blend all ingredients together for about 20 seconds.

Beat vigorously for 1 minute.

Pour into pan and bake until golden brown (20 to 25 minutes).

(note: if using self-rising flour, decrease baking powder to 2 teaspoons and omit salt)
