Cold Chicken Pineapple Curry

12 ingredients
- 2 cups Chicken
- 1/8 cup Celery
- 1 pound Pineapple
- 1 Kiwi
- 1 Canteloupe
- 1/2 cup Blueberries
- 1/2 cup Walnut
- 3/4 cups Mayonaise
- 1 teaspoon Curry powder
- 3/4 teaspoons Salt
- 1 pinch Pepper
- 2 Hard boiled eggs

Cook and cube the chicken.

Slice celery, kiwi, and half of the cantaloupe. cube the other half of the cantaloupe. Cut pineapple into chunks.

Save some of the fruit & eggs for garnish.

Cut berries and fan out for fun look.

Note: you can use blueberries, strawberries, grapes, etc.

Mix everything else.

If you used a fresh pineapple, save the outside, cut in half, 3rds or 4ths to serve salad on.

Store up to one day in the refrigerator.

Arrange on bed of lettuce with some slices of melon, berries, etc., eggs sliced on top.
