Potato Salad

  • 2 Eggs
  • 1/4 cup Onion
  • 1 teaspoon Salt
  • 1/8 teaspoon Pepper
  • 6 medium Potatos
  • 1/2 cup Mayonaise
  • 1/2 cup Celery
  • 1/4 cup Italian salad dressing

9 steps

  1. Boil the eggs until hard, then cool, chop and set aside.
  2. Chop onion (finely) and celery. Set aside.
  3. Wash potatoes.
  4. Heat 1" of water (add 1/2 teaspoon salt per cup of water) to a boil. Add unpeeled potatoes. Cover tightly, heat to boiling again and cook for 30-35 mins.
  5. Drain the potatoes, cool, and peel. Cut potatoes into cubes.
  6. Combine in bowl with onion Sprinkle with salt and pepper.
  7. Mix with Italian dressing
  8. Cover; refrigerate for at least two hours.
  9. Just before serving, add mayo, celery and eggs.
