Quickie Veggie Lasagna

  • Onions
  • 1 quart Tomato
  • 2 cups Cottage cheese
  • 12 Lasagna noodles
  • Parmesan cheeses
  • Slices of Cheeses
  • 1 and 1/2 pound Spinach (fresh)
  • Squashes

7 steps

  1. Preheat oven to 350 F.
  2. Steam spinach for about 5 minutes and drain.
  3. Make a spaghetti type sauce with tomatoes, spices, onions etc., but cook it for only about 20 minutes.
  4. For some reason, you're supposed to put the uncooked noodles in the fridge for at least 8 hours.
  5. In 13" x 9" pan, spoon some sauce in bottom, lay on 4 uncooked noodles, then 1/2 the spinach, then cottage cheese in spoonfuls and sliced cheese, then some other veggie, more sauce, 4 more noodles and rest of spinach, cheeses and squash.
  6. Put on at least 4 noodles, sauce, then cover with cheese and sprinkle with Parmesan.
  7. Bake at 350 F for an hour or so covered with aluminium foil; uncover last 20 minutes or so while baking.
